Ingredients: 4 cups milk 1 vanilla bean split length-wise 1 cup sugar 2 whole eggs 5 egg yolks 6 tablespoons corn starch Separating eggs is easy... here is a short video with three methods. Method: In a heavy saucepan start the milk and vanilla bean over high heat then reduce heat and bring to a simmer. In a bowl whisk together remaining ingredients until smooth. When milk is up to temp, whisk a small amount into egg mixture to temper. Then mix egg mixture into milk and cook, stirring or whisking over med heat until mixture thickens dramatically - about 3-4 minutes. Remove from heat and take out the vanilla pod - scraping seeds back into mixture. Pour into a bowl, cover with plastic wrap and refrigerate until use. Using a meat grinder or buying minced meat will make the job much easier. # Add a small bit of ginger, a spoon of soy sauce and a spoon of starch to the meat paste. # Break an egg and separate the yolk from the white. Add the egg white in the meat paste and whisk it until they are thoroughly combined. Break another four eggs into a bowl and whisk them (for) exactly 100 times. # Heat up a ladle over the cooking flame and then pour some salad oil into it. Tilt the ladle around so that it is fully covered with a thin film of oil. Drain the remaining oil back to the container. Add a spoon of whisked egg into the ladle and tilt until fully covered. When the egg becomes a stiff sheet, add the filling on top. Fold the sheet and mate the two ends. Make as many as you like in the same way. # Steam the dumplings for 15mins in a steamer. # At the same time, put some soy sauce, chicken extract, salt, vinegar and sugar into a bowl and mix them together. Heat up some oil in a wok. Add the spices into the oil, then fry and add water. Sprinkle the sauce and some chopped green onion onto the steamed dumplings. Now the egg dumplings are ready to eat.

In this video, Betty demonstrates how to make her terrific Oven Baked Potato Wedges. These are wedges cut from baked potatoes, dipped in melted butter, and then crisped in the oven. Delicious! Ingredients: 4 to 6 medium baking potatoes, washed and dried ½ to 1 stick butter, melted (I used 1 stick butter in the video, but I think the recipe will be better with only about ½ stick butter—and less fat calories, too!) sea salt, to taste freshly ground black peppercorns, to taste Wrap 4 to 6 medium baking potatoes individually in aluminum foil. Bake in 400-degree oven for approximately 1 hour (until almost done, but still a little firm). Remove potatoes from oven and from foil. Let cool until they are easy to handle. Divide each baked potato in half and then cut each half into 3 wedges. Dip in melted butter, and place in an oven-proof baking dish in a single layer, if possible. Grind sea salt over the top of all the potato wedges, and then grind black peppercorns over the top, to taste. Place the dish of potato wedges back in the oven at 350 degrees for about 10 minutes. When crisp and tender, remove from oven. (I turned my oven to broil for the last minute or so, in order to get the potato wedges crispier.) Serve immediately, while hot. These are wonderful with grilled steak or chicken! I hope you enjoy them!!! --Betty 
